 Won a Chili Cookoff today!

PostSubject: Won a Chili Cookoff today!   Fri Sep 12, 2014 5:16 pm

So, my company held their 2nd annual Chili Cookoff today. I won 3rd place last year, so I figured out where I went wrong and made it better, bolder, and hotter! If yall know anything about Texas, we love our chili hot! Well, I didn't turn mine into a 4 alarm fire, but it has a nice lingering heat that comes on after tasting.

Ingredient list
Can of Ranch style chili beans
1 Large Sweet Onion
1 1/2 bulbs of fresh garlic
1 habanero pepper
1/2 cup grilled New Mexico Green Chilis (diced)
1 lb lean, grass fed beef stew meat
1 lb lean, grass fed pork sausage
1 lb Sage pork sausage
2 cans of diced tomatoes
Bacon grease for sauteing the onions, peppers, and garlic
4 different types of chili powder
Salt to taste
1/2 tsp cumin

Cook for 7 hrs on low.... and then serve... Yummy!

I found out that I won 1st place! It was by 8 votes. I am ecstatic as I have NEVER won a chili cookoff before. Last year was the first time I had even placed. Next year, I will be going for Win #2! I even had enough left over for 2 bowls.

AND... the prize was a $65 Amazon Gift Card.

Sounds good--congratulations! It looks like you may have struck a certain balance in the ingredients. When I make chili I tend to overdo one thing or another, then that overpowers everything else.

Monbla, I didn't put EVERYTHING in the list, just the main ingredients. The secrets are still that Smile Plus, I need to step up my game for next year. My recipe needs a little adjusting to make it more unique and better. Also, ingredients don't mean much if you don't know how to cook it Smile

Well, as a matter of fact I did. LOL. I lived in NE Oklahoma for 8 yrs before moving to the Houston area in 2004. I just asked my wife (a texas native) about chili without beans, and she confirmed that Texans are insane for no bean chili. lol! Twisted Evil Twisted Evil Twisted Evil Oh well. I guess they can hate me then. I won WITH my beans. Razz geek

I was wondering about that. I also thought pork was a no-no. Pork is southern; beef is Texan.

Hard to argue with a winner, though. And I do love beans.

I like my Chilli with or without beans, makes no dadburn difference to me. Although my friends and enemies like me more without beans.........that's too bad.

I feel the same about BBQ - good is good and I'll call them all BBQ, regardless if its from Texas, St. Louis, Memphis, or the Carolinas.

No but my father and several of his friends went out there in the early 60's every year to engage in the "Chili Cook-Off" they had out there. Don't know if it's still going on these days and the first time I had Chili w/beans was when I was up in Tulsa at a friends and he put beans in his Chili!! Twisted Evil Twisted Evil Twisted Evil

I usually shy away from controversial matters concerning food but I haven't ticked anyone off all week so I figure what the heck... The beef brisket smoked over a slow burning mesquite fire for 12-14 hours has to be one of the best things I've ever eaten but it isn't real BBQ. Real BBQ is made from whole hog pork cooked over a oak wood fire for 10-12 hours while being basted in a vinegar based sauce. You can only find it where the real BBQ is made and that's in Eastern North Carolina. Just a fact of life so deal with it.

Now to settle the chilli question. Real chilli and I mean the best on the planet is available at one place and one place only on certain days of the year. Those are cold snowy days with the temperature 30 degrees or lower and you have to be at my house to get it. Don't even think about asking what's in it because I'm not saying but anyone that has ever had the privilege of having a bowl will swear it's the best they ever had. I will tell you one ingredient that really makes it special...mushrooms! Now put that in your pipe and smoke it.

OK you can flame away now not that it will change the facts as I've stated them. BTW Congrats JP.

This ought to stir the pot. lol! lol! lol!
