 Favorite hot sauces?

I'm a hot sauce devotee from way back. Here's a few of mine in no particular order-



Rooster sauce is great on just about everything. Just the right amount of heat, and wonderful chili/garlic flavor. Yet I think they've toned down the heat in recent years........or is it that my palate has become more accustomed to it?



I love the entire El Yucateco line, they're hotter than most yet still have great individual pepper flavor. Especially like the Jalapeno green and Chipotle. A little goes a long way, and they're inexpensive as well.



Good old reliable Tobasco is what I came up on and still enjoy it for a vinegar based sauce. Regular, Green, and Chipotle are my faves.



Franks is another great vinegar based sauce. Not nearly as hot as the others, but plenty of mild pepper flavour. Tried the RedHot Wings variety and was underwhelmed.



Tapatio has been a staple for many years. Inexpensive, and a great mild/med heat with great flavour.

There's also a WA state brand who's name eludes me right now, but has the title "bay" in it. Preliminary searches brought up nothing but I'll keep looking. They have 3 expressions, and all are wonderful. Must be somewhat small.

I've tried just about everything out there, at least as far as what's available in my area. And that's a lot actually.

These are only some of the first ones that spring to mind. I'm sure I've missed many others.

Frankly I can't handle any of Dave's Insanity line. They seem to be more focused on intense and unmanageable heat at the expense of flavour. Not enjoyable for me, and I'm not out to claim any titles as to who can handle the hottest of the hottest.

And the pic sizes are something I can't do anything about, if they're too large for you. Don't know how to resize
if you're on a phone or somesuch.

Is Tabasco still made in the USA? I noticed they changed the label awhile back.
I like the more mild Franks, Crystal and Cholula on chicken, fish and Mexican food. Shocked

El Yucateco Green if I'm adding it to something at the table, if I'm making chili I use their black roasted pepper sauce. And not a sauce, but I use it in my beef jerky marinade, Wicked Tickle Black Skull hardwood smoked ghost pepper powder.

Marie Sharp's Fiery Hot Habanero
Huy Fong Chili Garlic Sauce
Frank's Red Hot (indispensable for making Buffalo wings)
Cholula Green
Melinda’s Original Habanero XXXXtra Reserve
Tabasco Original (best thing for Cajun food) and Chipotle
ChileHead's Garlic Habanero Hot Sauce

I like very hot sauces, but only if they are naturally hot from the chilies used. I don't like sauces with pepper extract; they have an "off" flavor to me.

I can't recall disliking any hot sauce. The "Rooster" Sriracha is in a class of its own. I tend to use it on everything, even a simple cheese sandwich. But one I've used for decades on dull vegetables like collards or kale, among other things, is Red Devil, quite similar to Frank's. I think the reason I like it is that it's mild, and you can dose hell out of anything objectionable.

Here's the WA state sauces I was trying to remember. These are fantastic-







Cornet Bay makes about a dozen different sauces, and is located on Whidbey Island, WA.

The climate you chaps live in you should be growing your own chillies and making your own sauce, you'd get far more pleasure out of it.

arky, you asked what kind of peppers were used in this. From their site-

This one is Jamacian style. Kinda sweet too.



This one has a garlic twang to it. Very nice if you like garlic, and I do.

Pain is Good brand has several more that I have yet to check out.

Forgot to add that perhaps the finest hot sauce I've ever had, the crème de la crème, the Magnum Opus if you will, came not from a commercial enterprise but from a guy in the local homebrew club. He concocted a Chipotle sauce, and smoked Chipotle peppers he grew himself which he then blended with other ingredients. The result was pure nirvana I tell you, pure bliss!

Just the right amount of heat, smoked goodness, and pepper flavour. Like Goldilock's porridge it was just right! Gott im Himmel it was great!!! He graciously gave me a pint of this in a re-purposed whisky flask, and I savoured it over many months. Wanted to make it last, you see. He had a grand vision about producing this commercially in 3 strengths. He named them in ascending order according to heat-

Cheeky Monkey
Naughty Monkey
Spanky Monkey

Sadly, his venture never got off the ground. Apparently the method he had of smoking the Chipotle peppers was too labour intensive for commercial manufacturers, and he refused to let the process be dumbed down. Good for him on the one hand , but a pity on the other!

Ah well, at least I had a chance to grasp the gold ring once in my life!

Korean Gochujang Hot Pepper Paste - drop a dollop in everything and anything. stews, chili, stir fries, marinades, whatever you can image. Lasts forever in the fridge.

Chipotle Peppers in Adobo Sauce (San Marcos is the best I've tried thus far) - same as above, but a really simple recipe is to take plain sour creme and mince one of the peppers and stir. A little at a time. I've done it with a cheese sauce too, but I was desperate in that instance. I don't like cheese sauces. Even folks who don't like spicy food will like it if you tread lightly with it. The downside is that you have to use it quickly. It can mold and get gross in several days.

All the variations of Cholulah, the green and chipotle Tobasco rock too. Various oriental hot sauces and oils, but my keyboard doesn't have the characters to type the names....

Love the Yucateco sauces too, great flavour and heat not like some "chilli" sauces that are just vinegar, red colouring and a ton of capsaicin.

If you guys ever get to Australia you've got to try the output of two of our hot sauce manufacturers. One is Byron Bay chilli which does awesome sauces, my favourite is the mango chilli sauce, nice and sweet with a good zing. The other is the Morrisett chilli factory who have a huge range of hot sauces. They score the heat 10 out of 10, if it says 11 or higher you'll see through time. They've an asian style sweet chilli sauce called Dragons Blood which lives up to its name, I've had a bottle of it in my fridge for almost a decade I use it that sparingly.
