Wife brought home a big ziplock filled with well chilled Razor Clams...fresh from the Oregon Coast. Some guy at work offered ‘em and she was the first one to do a flyin’ tackle on him. They were already shucked and cleaned...not a speck of sand.
Butterfly cut ‘em, dried completely on paper towels, dredged in seasoned flour, dipped in beaten egg, pressed into crushed saltine cracker crumbs, rested for 30 min. to set up then quick fried in a blend of Olive Oil and Organic Butter. Tender and crispy, rich and rewarding. Along side some potato and macaroni salads and a well chilled Coors Banquet Stubby.
Oh Mama. Only thing that would have made it better would be to add a fat Dungeness Crab in there somewhere. Maybe some baked Halibut. Well, the clams were fine by themselves. No need to be greedy.
