Do I have to press them or can I just jar them up after blending and what would the difference be

You can just can them, I'd say pack them pretty tight so the flavors marry a bit. Pressing will make the smoke more consistent but the majority of blends that aren't pressed.

Some of my blends are just mixed and loaded, but I press most of them. I find it helps blend the flavours and I worry less about moisture loss.
