That makes perfect sense! I bake on my weber grill and was using that as a point of reference. A dutch oven is close quarters for rising bread. Paper would displace some heat. I also put my oven IN the grill as a wind barrier.

The stepping stone is a good idea as a base for it.
 
I'm impressed by all the serious replies to this thread. We've got quite a "breadth" of knowledge here on BoB. Actually, I rarely burn it like this. There was a bit of an Easterly blowing up the ally this time, and I wasn't paying attention to the coals. Yes, Scottie, the burnt parts scraped off quite easily.

Bread is like poison....It would make me poop sideways. I call it jailhouse food, however I sure could satisfy myself with some ribs cooked in there!
