Vaughan Williams, Sir John in Love - Fantasia On Greensleeves.  If there was ever a piece that conjures images of the quintessential English countryside of old in summer, this is it, most notably the middle section.

Rande, if you're not familiar with this piece, I recon it would knock your socks off and take you back to fields of yellow rape and blue linseed...
