Do you use a particular mechanical system or do it all by hand?
I started using the Wicked Edge System and a 400x microscope to see the edge. It has opened up a whole different world of sharpening for me.

I do it by hand. It takes a lot of time, but it calms every molecule of your body, and yes, smoking while you sharpen your knives is like Zen.

Recently, I've bought some Lansky tools, I can spend whole day sharpening and smoking.

By the way, this Wicked Edge sharpener seems awesome, just saw a video on youtube and I guess I'm going to purchase something like that. :) thanks for the idea.
 
I'm a kitchen Knife Addict, Current fetish is Japanese Carbon blades.
Sharpen everything by hand.
